Fresh Acres' Best Ever Black Bean Soup

500      g          Fresh Acres Organic Black Beans, soaked overnight

2          tbsp     Organic Olive Oil or Butter

2          large    Organic Onions, chopped

3          cloves  Garlic, Minced

3          each     Organic Carrots, chopped

3          each     Organic Celery Stalks, chopped

1/4       tsp       Cayenne Pepper

3          each     Bay Leaves

1          rind      Organic Lemon, peeled rind

1          tbsp     Ground Cumin

1          tbsp     Oregano

1          tsp       Thyme, dried

1          tsp       Liquid Smoke

1          Can      Organic Diced Tomatoes

1.5       L          Organic Broth or Water

                        Salt

                        Pepper

 Garnish with chopped green onions, cilantro and a swirl of yogurt.

  1. Heat oil or butter. Add onion, garlic, carrots and celery.
  2. Saute until onions are soft. Add drained and rinsed beans and remaining ingredients.
  3. Cook over medium low heat for 2 hours or until beans are soft, adding more water as required.
  4. Add salt and pepper to taste, remove bay leaves and lemon rind.
  5. Puree in blender or food processor, adding water if soup is too thick.
  6. Reheat before serving, adding garnished to each bowl.
