Fresh Acres' Best Ever Black Bean Soup
500 g Fresh Acres Organic Black Beans, soaked overnight
2 tbsp Organic Olive Oil or Butter
2 large Organic Onions, chopped
3 cloves Garlic, Minced
3 each Organic Carrots, chopped
3 each Organic Celery Stalks, chopped
1/4 tsp Cayenne Pepper
3 each Bay Leaves
1 rind Organic Lemon, peeled rind
1 tbsp Ground Cumin
1 tbsp Oregano
1 tsp Thyme, dried
1 tsp Liquid Smoke
1 Can Organic Diced Tomatoes
1.5 L Organic Broth or Water
Salt
Pepper
Garnish with chopped green onions, cilantro and a swirl of yogurt.
- Heat oil or butter. Add onion, garlic, carrots and celery.
- Saute until onions are soft. Add drained and rinsed beans and remaining ingredients.
- Cook over medium low heat for 2 hours or until beans are soft, adding more water as required.
- Add salt and pepper to taste, remove bay leaves and lemon rind.
- Puree in blender or food processor, adding water if soup is too thick.
- Reheat before serving, adding garnished to each bowl.
